Right you are--in both the spelling and the assertion that the dish is addicting. My Philippine wife makes tons of the stuff and it's delicious. She'll be making a big vat of pancit for our NYE party, sending everyone home with a container of the stuff. Happy Pinoy New Year!

My charge nurse is Filipino and she brought that and roasted pork to work to share with us.
You really cannot just eat one serving of pancit....it's the noodles....so damn delicious. We have several Filipino nurses at my hospital and they all live in the same subdivision. Their food is amazing.
