We had no host, no bartender, no busboys, no expo.

Only servers and cooks and someone on togo orders. People sat where they wanted, and then a server had to leave their table and create a list once we went on a wait.

Servers bussed their own tables while also waiting on tables.

Servers trayed their own food, made their own desserts/salads/soups.

Yeah, I watched the crumble of a place that lost all of their experienced servers.

You might be able to find warm bodies to fill their spots if you advertise, but without knowing the menu or the ins and outs of the place, they're about as good as throwing a random customer in uniform. They're expendable in some form, but it isn't advised for a manager to treat them like shite.

First person that asks "What comes on your house salad?" will get no answer from a newbie.

I'll give you an example. I went to Manur's about 5 years ago and it was the last time I went. I ordered the surf and turf (Filet and lobster tail). I specifically told the waiter that I wanted my steak medium. Being that I'm black and all black people like their steak well done, he totally ignored my request and brought me out a burnt steak. My wife told me to tell him to take it back, but I didn't want to be "that black guy". So I ate it, gave him a nice tip and never went back.

I know some will say why did you tip? Because I'm a black man in a "nice" restaurant that has to overtip for other black people that don't tip to keep people honest.

Damn.

I close and we cut our expo, bussers, hosts, etc. in the last hour or two and I hate it, I couldn't imagine doing that all day.

We already have to make our own salads at any time of the day and I hate when I have a table of 6, and the last person decides to order a salad, and then the other 5 are like "Yeah I'll have a salad too!" and I have to find time to make 6 salads as well as take care of my other 3 tables

I waited tables for a while and I get the stereotype. I even have friends that I don't like to go out to eat with because they can't seem to understand that servers basically only work for tips. They feel it's the restaurant's responsibility to pay the servers since they are paying for a product.

I will say this some of the best tippers I have waited on are black. There was this guy that came in for lunch 2 or 3 times a week and always left a twenty on like a $15 meal. If my family goes out to eat as a group, that server will get his or best tip of the week or month probably, we always tip well past the grat.

As for the assholes in the original story. Black people hate blacks that act like that more than anybody, but we don't want to here ignorant people trashing all blacks as a group when most of us are nothing like those people.

Yeah, it sucked because we were known for our gumbo and 90% of customers started their menu with gumbo.

Takes up a lot of time.

Not so subtle brag...Current results are in top 10% of a large national chain...

Good for you. It's sad that that is how it has to be. But the "culture" to not tip is what it is.

Pretty ridiculous conclusion and a perfect example of your not understanding what bad service on the part of the server is. How do you know what the server told the cook? How do you know that the cook didn't just screw up the order? If you are serious then you are just looking for a racial interpretation.

ETA: I didn't even know there was a stereotype that black people like well done steaks. Is this really a thing?

I know you are joking but steak temperature is a tough subject. There is no excuse for wrong temperature in a higher end place but in a chain like Applebees or Chilis steak temperature is a mixed bag. But its not the server's fault if you wanted it medium well and it came out medium rare.

And I admit I do a double take when a black person orders a steak that's not well done

Last week I had a black guy get a well done steak and proceeded to complain about how it was dry and tough, no shite man you ordered it well done. He still got it comped though
