Depends on the duck. I hate Mallards but woodies, gadwall, teal, and widgeon are great eating.
Duck dressing, grilled or in gumbo is very good. I've even ate fresh deep fried wood duck that was awesome. If my daughter and her boyfriend kill enough I plan on making duck jerky.

I've only had nutria in a sauce picante and you couldn't tell it was anything different from any other wild game.
No clue how anyone doesn't like duck...Most puddle ducks taste really good and don't need much done to them IMO, I usually soak the breast in ice water for a couple days, changing the water out. Not a huge fan of diver ducks,they seem to be a bit gamier, with the exception of a canvasback for some reason. Wrap them in bacon with a jalapeño on the grill and you can't tell the difference.

Ducks are terrible send em all to me ;)
On muskrats, there is a local Lions club that does a rat and fish dinner. You only eat the 'saddle" of it and cleaning it to remove all the glands (musk) is the key. Fried up its tasty, they buy them from local trappers, clean them, soak them in cold salty water and then off to the erl.

I went hunting one time with my uncle. His friend cooked us a "rabbit stew". I noticed the rabbit quartered meat was larger than any rabbit I had ever eaten and referred to it as a rabbit on steroids. It tasted better or as good as any rabbit I've ever eaten. It was n rat. I wouldn't clean one, but I'd eat it again, good grub.

Duck dressing is awesome. You put chicken or turkey dressing in front of me, it will be slapped away.
Duck wraps are awesome too.
Duck in gumbo is good, but I wouldn't say it was awesome.
We don't do a ton of duck hunting, like to have about 20 in the freezer at the end of the year for dressing the next year. We fully pluck a duck like it is a chicken.
