Best the wife and I have had is Roux Pour in Sugar Land. Very good, and actually do them on an open flame rather than just passing through an oven.

Roux pour is pretty legit all around. My wife used to work down there and found it.

LA Bar and Restaurant on Richmond just in the 610 Loop (Galleria area). Pretty tasty, have had them several times.

If you're OK driving down 45 south, Gilhooleys is also pretty good. Andrew Zimmern filmed one of his Food Channel segments there.

gil's is the best option i know of, but i think there's a new oyster bar in either the village or midtown ... been open a couple of months, maybe, but can't remember the name ...
