You lost me at step one, with the Crisco. I don't eat trans fats if I can help it (though I'm sure I often eat it without knowing).

I prefer my food to be 100% food. Trans fats aren't food. The human body doesn't digest or metabolize trans fats - doesn't process trans fat molecules in any way.

When you eat trans fats, two things can happen. If you're lucky, you pass the the unaltered molecules out of your body.

Or, if you're unlucky, the molecules enter your blood stream and get stuck to the walls of your blood vessels. Where they stay, catching more trans fat molecules. Forever. (Or until the autopsy.)

And it's not as if trans fats taste good, either. They solely benefit food processors who want to sell shelf-stable products. The home cook has no rational use for trans fats. Even in baking, pure white lard is superior.

Looks great, probably tastes better. The only thing I would have done differently is served corn bread muffins instead of the French bread. For some reason the combination of corn bread and red beans just does it for me.

To each his own. Wouldn't throw either on the floor but I love me some catheads with red beans & rice.
