I'll be doing a smoked turkey, chicken , duck and sausage gumbo at the camp tomorrow night. There will be okra, of course. The sausage will be Rabideaux's . The roux, already made, is a shade darker than a Hershey bar. Gonna be damn good.

Rabideauxs is my go to for gumbo. It stands up well to longer cooking times without drying out. I've been getting their dry cured bacon when I see it, try it if you find any.

Any idea where he is? I always liked James. Good guy albeit very quiet.

Man, their venison and pork has become my go to for almost everything, but especially gumbo and red beans. I love the smokiness
