Just made some jerkey out of coot

1 cup of Moore's
1 cup of soy sauce
A lot of Tony's
Splash of liquid crab boil
Gonna add some cracked black pepper once it's all done

shite is pretty Damn good POL team will get a sample.

Marinate for a day. I don't have a dehydrater so I am using the oven at 200 for several hours.

Did you lay said coots on their backs, put a foot on each wing and pull the legs to clean them?

An old timer showed me that and I tried cooking a few since they were so easy to clean. Mine must have been feeding on something different/different geographical location or something. They were horrible.

They are good in a gumbo, as are gros becs (or so I've heard)
