My buddy's wife makes similar caliber cakes. I'm assuming she uses "fondant" too. Obviously my palette is not as refined as some TD posters because the ones I've eaten all tasted great.

Fondant is terrible. It makes the cakes look great though.
Personally I am not a fan of the new cupcake/cake fad where people's talents to make them look good are quickly smashed by how overwhelmingly sweet they are to make them pretty inedible beyond like a bite.
I rather have a horrible looking cake that tastes amazing.

The best part about her stuff is the taste, and I'm not just saying that because she's my wife, I'm saying it because her stuff is truly the best I've ever had.
She's been doing this a looooong time and when people stop in their tracks and say "Oh wow, that's good." Then she must be doing it right.
