Ditto, it is a nice change of pace from the turkey, dressing, ham, gumbo etc

Start with a great cut of beef,choice or even better prime standing rib roast, have butcher cut and truss it, season with salt and pepper genoursoly , slather softened butter over ends, place in roasting rack over a roasting pan, put in 500 degree oven for 30 min, then turn down to 275-300 until internal temp is 125, take out and rest while mixing some beef stock with drippings, cut strings and pull bones off (delicious) then slice and serve with au jus

We have a large party on Christmas Eve with heavy and regular cocktail food and a lot of it. We have a big breakfast Christmas morning. Gumbo and party leftovers Christmas night.

Brown liquor and hundreds of brown sugar bacon wrapped lil smokies.

I'm just excited about cooking. I've been without a kitchen for 1 month due to a water leak. Had to replace whole kitchen. Can't wait to get back in the kitchen!

Crown roast of lamb with a roast goose alongside. Sides will be parsnips with sweedes, leeks with white sauce, roast potatoes, fresh brussels sprouts, roasted chesnuts and Yorkshire puddings.

Last year I did braised short ribs.

WIll be at the in-laws. They like ham usually.

Christmas Eve will be my mom's seafood gumbo, potato salad, and Italian cream cake.

Christmas day will be my uncle's BBQ'd pork and beef loins. My aunt will add kibbeh, stuffed grape leaves, and syrian bread. Side dishes will be similar to Thanksgiving.

Im trying to talk the family into buying a whole rib eye and having a steak dinner for Christmas...... they not biting so far. Im tired of Ham and Turkey come Christmas time.
