BGE issue when smoking

So whenever I smoke meat in my BGE the meat becomes inedible because the ash sits on the meat and gives it that horrible fire flavor. I have smoked a lot of meat on a stand up gas smoker and always come out fine. I was wondering if anyone else had this issue.
Maybe I need to soak the wood in water? Less wood? It just seems like I put a handful of chips in and it still happens.

I have no clue what what you're expierencing but it sounds like you are doing something very wrong.

Haha it's like the smoke can't completely escape so it sits on the meat.

Only slightly on top and bottom because I'm trying to keep the temp low.

what kind of charcoal are you using?
get an ash tool and clean out your fire pit before every use

Royal oak but the wood I'm using is apple usually but not sure of the brand

maybe you just dont like the smoke flavor. I dont really either
ash shouldnt be rising in your cooker though.

It's visible and can be washed off like ash.

Clean the ash out........maybe let the fire burn off a little more before putting meat on.
I've had mine do this when using charcoal that had been burned already. This was while grilling so I just let the fire get real hot and it died down.

Maybe the ashes at the bottom need to be emptied. Other than that I don't have a clue

Unless the OP Is sticking a blower into the bottom vent, ashes should not be going anywhere near the meat... No matter how full the ashes are.

Fwiw I never use the vent on the top, I remove the ceramic vent top completely. I purchased a steel type of vent for the top that can be opened but I very seldom use it as well. I just use the slot at the bottom to regulate themperature.
