Early AM smokers check in

Bird is about to hit the Kamado Joe. Been in a brine solution of salt and sugar since yesterday. As soon as temp is right, smoking him with sugar cane and hickory. Anyone else up?

"Frying" 20 and 22lb birds here in my oil less fryer. At 10 mins per lb I needed to get an early start. Got a little Baileys in my coffee and all is well so far.

Dat sounds like a good idea. Have some hazelnut liqueur my wife cooks with I might throw in there.

We threw some geese on, but we're headed to the slough now to try to clip a few wings. Hopefully some wood ducks to throw on as well for an afternoon treat.

Bird on the smoker at 5am, using hickory and a few chunks of Apple wood. Coffee in hand, enjoying the cool weather.
Doesn't get much better than this gentleman.

Jealous of all the cookin. Mine is done... Traveled for Thanksgiving this year, so I ordered a smoked turkey from Greenburg n Tyler, TX. They delivered yesterday. I made a giblet gravy before I left BR tho.

Havin coffee at the moment. Eating lunch then headed back to BR for inlaws dinner

I'm only having to do a turkey breast so I'm not having to get up as early as some. Brined all night going to put it on the smoker in a couple of minutes with some apple wood.

Kind of a hijack but I've got to take the turkey on an hour drive after its done. Any ideas on best way to travel with a cooked turkey breast?

Safe travels, Boss. Just pulled Bird # 1 and Bird # 2 will pull in 30 minutes. They'll be warmed for lunch, and I'll be napping like a bear by 2:30 pm.

Wrap in foil then wrap in a towel. Should have no problem keeping it warm.

Put mine on at 6 with cherry and apple wood. Just went to put maverick thermometer in. Seems to be cooking little quick for a 21 lb bird.

My turkey cooking is being left to others today. I did get a fresh bird yesterday and plan on putting it on the primo Sat morning.

Your bird looks great, what you season the outside with...

My skin on mine broke and all shriveled up



But when I put the thermometer in a while ago it was still really juicy


Brined it in honey and kosher salt solution all night

This sounds interesting, did you just put whole pieces in? I thought when sugar cane burnt it gave off a bad smell?

I cut it into about 6" pieces. I put about 3 big chunks of hickory and 6 pieces of sugar cane scattered around the fire box. I also put three pieces of cane around the bird. Smell is not bad at all, and it imparts a light smokey flavor. I just add a little hickory because I like it.
