Fish ideas needed for Thanksgiving.

OK, I got 3 pounds of frozen catfish filets thawing in the fridge. Lucy said she didn't want turkey so what should I do with the catfish besides basic frying?

This is not for a family dinner. Just the two of us tomorrow and leftovers. Want to try something new. TIA.

Smoke 'em. Drizzle a little brown butter, lemon, parsly sauce over them.

Make a catfish bisque with cornbread dressing boulettes. Add the catfish late in the game to keep it from breaking up. Serve with a crunchy french bread, and dirty rice. Make some cranberry martinis.

eta: scratch the french bread and do something sweet potato.

Bronzing...generously season with a Cajun seasoning mix ( salt free for you) and paprika. Over med heat, sauté a few minutes per side, until done, in a few T of butter or butter/oil mix.

I really only like catfish fried, but a catfish cake would be fine. A smoked catfish cake would be pretty darn good, too.
