Will redfish make a good ceviche? I've done tuna and shrimp but never redfish.

i would assume so. most white fish are pretty good in ceviche.

Sure. I was watching an old Good Eats episode that used farm raised catfish in Ceviche. I think just about every fish can be used.

Id freeze it first, thaw, then use it. Freezing will kill any parasites.

Very good ceviche. Cut blood lines out first.
