White Bean and Sausage Soup

Mentioned this recipe in a thread last weekend and some posters asked for the recipe. I never got around to posting it, so here we go...
1T olive oil
1.5 medium onion
2 celery ribs
1 bell pepper
3 cloves garlic
1.5 pounds pork/sausage ( I used what I had leftover in the freezer: 1/2 pound andouille, 1/2 pound tasso, 2 smoked ham hocks)
3 cans white beans, drained
6 servings of better than bouillon ham base
1 cup swanson's creamy soup starter
6 cups water
1 can of rotel
Hot sauce
Nunu's cajun seasoning
black pepper
1. First I boiled my hocks for about 3 hours and used that water for the soup
2. Brown meat in a dutch oven
3. Add the veggies and cook until onions are translucent
4. Add all of the other ingredients and cook for an hour, check for seasoning and cook for another 30 minutes. Serve with cornbread
This was the first time I made this and followed the recipe as it was given to me. Next time I'll cook my own white beans but it really came out well as is.
