Veggie Sandwich recipe please

I got some very good tips on this board with my broccoli request so I am back asking for advice on how to make a decent veggie sandwich. This is what I have: sweet onion, green & red bell peppers, sliced mushrooms, tomato and, of course, broccoli. I want a hot grilled or baked sandwich. I will avoid cheese but don't mind using veggie slices fake cheese.
I have a small toaster oven I want to use so I don't have to heat up the main oven. Do I somehow cook the veggies first in olive oil, then put on bread in the toaster for a few minutes. What other vegetables to add? And what kind of bread should I use? Pita? My first attempt with regular wheat bread did not turn out so good. It fell apart.

First, buy better bread. No, seriously. Stop buying smushed supermarket sliced. That stuff is awful.
Slice onion, sauté u til caramelized. Add sliced mushrooms and red pepper, cook until tender, then add chopped broccoli. Don't cook the broc too long....season with a big squeeze of lemon juice and Red pepper flakes. Use as a sandwich filling for a hollowed out, toasted hoagie roll. (cut a slot in top of roll, pull out some of the insides, toast, then stuff w veggie mixture)
Have you tried making broccoli slaw? Shred the broc stems (or buy shredded broc in the produce dept). Mix w carrots, thinly sliced cabbage, and your fave slaw dressing.

avocado, tomato, pimentos, mozzarella, oregano, and a little olive oil.
