Brining Turkey

Anyone have a good brine recipe for turkey?

1 gallon water
1 cup kosher salt
1/2 cup sugar
peppercorns and bay leaves
Boil about a quart of water and add the salt, sugar and spices and let cool then add the rest of the water and soak your bird in it overnight.

I use 1/4 cup of salt to 1/2 gallon of water. Put turkey in an ice chest overnight with the brine and 3 or 4-2 liter bottles filled with water and frozen.

If your turkey is frozen you can get by with less ice as the thawing of the turkey will keep the brine cool enough.
