How much cooked meat from a brisket?

Bout a big 14lb packer today.......about how many lbs of meat do you guys think it will yield once cooked?

I will slice and eat some and then im chopping some up for a chili competition I'm in on Tuesday.

55-60% yield IMO.

I've not trimmed it.......it doesn't look to have "alot" of fat though.

I'm thinking it may have been trimmed up before packaged.

I got it a whole foods because the briskest at Tom thumb had every ounce of fat trimmed off of them.

Here's a BBQ catering worksheet I found on the web. It says you'll retain about 62% of the weight. But take a closer look because it gets pretty specific into different cuts of brisket.

I've cooked hundreds of the packer briskets and weighed out the resulting edible yield. It's always been between 45-60% depending on how well it was trimmed. Brisket prices have been ridiculous for a while now and it's not much more per pound to eat a decent steak.
