What's your favorite non fried seafood poboy/sandwich around New Orleans

Feel free to suggest items outside of this area, but try to limit it to the southeast. Veal parmesan from R&O's is probably my favorite, with the cochon (add coleslaw) from Crabby Jack's coming in second. Staying within the state, but outside of NO the Darrell's special is right up there too. Just looking for some other good options when traveling around LA, MS, AL.......

The "Bleu" sandwich at St James Cheese company, cant remeber the whole name
