sorry i dont have other photos of the process or the finished product, but i was hammered drunk by the time the stock got to a simmer. lucky i got this picture. regardless the jambalaya was phenomenal... as always
my point is that i wanted to show the onions/trinity when we are done with it. 2 1/2 hrs on the onions and another 30 minutes with the bell peppers and celery. this started off as 10 lbs of onions.

yes sir. start off with the rendered fat then periodically add small amounts of water. makes a real nice base. no kitchen bouquet needed in this jambalaya
