Game day for college football games are always lots of fun, but south Louisiana tailgates are usually not the healthiest events, so one LSU student wants people to know they have choices before they buy the sodas and hot dogs.
In a Mandeville kitchen, Chef Robert Vasquez sauteed marinated chicken breast with kale, fresh herbs and onions.
"We make our own dressings, so I'm going to add a little bit of Aioli," Vasquez said while cooking.
Besides the balsamic vinegar and apple cider, a little Louisiana honey goes in, too, before it all gets rolled up into a coconut wrap. It's a gourmet twist on tailgate food and one of the most popular items at LSU's newest concession stand.
"We are located right next to Mike the Tiger," said LSU junior pre-med student Monica Bravo.
The healthy stand is the brainchild of Bravo, who teamed up with the chef and his wife, Lindsey. All of them share a passion for the paleo diet and none are particularly fond of stadium food.

It's a radical departure from the nachos and hot dogs and at least some of the 100,000 fans that pour into Tiger Stadium are glad to have the option.
Look for those healthy concessions at the last two home games. The stand is located between Mike's cage and the PMAC.
I'm headed to the TAF bourbon tent on Saturday. I'll give it a look.
But no way would I put down my sausage and Beam for that crap.

Looks good, but I'd eat it on like a Tuesday. Saturdays in the fall are for awful food that tastes amazing.

I think that's "cool" to the kids these days.
I'll take a hotdog and nachos to my grave.

I walked pass their tent this past Saturday, and lets just say that business was slow. I do not doubt that a few of the 100,000 fans may want this choice. However, they need to find a good way to advertise to that crowd.

Went to high school with her. Fine girl. But this is another food fad that'll die. She's able to afford a food stand from the wealthy parents she has

Hats off to her either way! Most kids set up lemonade stands. She sets up a food tent at Tiger Stadium.

You think health food is a fad?
If her food is around the same price point as the nachos and hotdogs, I'm finding her.

Sorry you enjoy the worst nachos and crappy hotdogs around.
I'm not talking about food at tailgates, but concession food.

I'm sorry you can't enjoy the simplest of things at a football game with 102,000 people. Don't feel sorry for us. We are happy in our ignorant bliss.
You really are the fricking worst.

I am shocked no one here has done a scathing review of Tiger stadium hot dogs or nachos yet.
