Is there an official term for this?

A song starts off with a part, guitar riff or synth loop or whatever, sounds fine, then percussion comes in and that same part kind of sounds different even though it hasn't changed. I'll sometimes listen to the part with drums then skip back to the beginning to the song to see if I can hear it correctly, but it rarely happens

I know exactly what you mean and I find myself trying to find the original riff or chords within the percussion, it's frustrating

it's just the band recording another guitar track on top of the initial guitar track. pretty common
otherwise known as "overdubbing"

bowie produced this track. had the bassist use an upright and an electric bass. one track for each and put them on top of each other.

I don't think that's it. It's like they start the song the middle of the riff whatever, and the drums brings out the original intent. It's like you think you know where it starts, but then everything else comes in and it's completely different.

Kind of similar to syncopation... but that's not exactly what you're describing.

in those examples, they are playing the original progression so idk what you're talking about

This is a difficult thing to describe, I admit.
It's a matter of perception. It's the same progression, yes, but it takes on a new life with drums. Like with the Hives video, it seems pretty straightforward, but when the full band comes in, syncopation is involved.
