Article says DON'T Soak Beans

There was a thread on this the other day. I always soak my red beans because my mother told me to, but this says I don't have to. It would be easier just to throw the beans in the pot the same day.

I dont soak mine. Just cook them in the good stuff for a little longer.

I don't think you have to soak them. It just makes for easier digestion... or at least, that's what I have always thought/been told.

Advantages of soaking:

Less gas
more intact beans in final product
soaking allows brining which helps skins cook at same rate as interior
soaking helps old beans cook better

Article claims recipes say you MUST soak beans. I've never seen one that does.

A lot of the substances that cause gas are released by soaking. Discarding the soaking water and rinsing gets rid of it.

If gas is a problem, the Mexican herb epazote is supposed to cut down on it.

ETA: Today' culinary vocabulary word of the day:

A carminative, also known as carminativum (plural carminativa), is an herb or preparation intended to either prevent formation of gas in the gastrointestinal tract or facilitate the expulsion of said gas, thereby combatting flatulence.

I've been having issues with too much of the beans breaking down and not enough whole ones in the final product. And I soak the beans.

Will look into that epazote or whatever though.

So, if it removes sugars does that mean it alters the flavor? Would think it has to.

I only made one brief visit to an Ideal Market, but I'd bet they carry it.

By the way, when are they ever going to get the new store at Airline and Clearview open?

It grows wild in LA. I had a helper from Honduras, we were getting something near a tree line and he looks down and goes ape shite. He dug out the plant and put it in a bucket. He said you cant find it fresh in our area. He showed the other Hispanics on our crew and they all went dig up a couple plants. He did tell me that you only need a few leaves to season a pot of beans.
