Question for the more experienced cooks here..

what's the difference between smothered chicken and chicken fricassee? Seems like my mom cooked "smothered" steak or liver but "fricasseed" chicken.

Typically anything smothered is done with alot of yellow/vidalia onion and other vegetables. Any fricasee' has a roux base.

Here's my mom's:

5 lbs of potatoes- boiled
1/2 doz eggs-boiled
1 bunch green onion- chopped
1 lb of lean bacon-(fried & crumbled)
1/2-3/4 jar Mayonnaise (30oz.jar)
2-4 tablespoon yellow mustard
salt & pepper to taste

Place the potatoes in medium saucepan and add enough water to cover by 1-inch.
Bring to boil over high heat and cook until the potatoes are just tender,about
15-25 minutes. Drain,cool then peel potatoes.


While potatoes are cooking , boil eggs in separate pot.
Cook bacon and crumble, chopped green onions.

Mix potatoes(cut in quarters), eggs,green onion, bacon,s&p,in large bowl.
Add mustard, and start by adding 1/2 jar mayo. Mix well. You can add more mayo
if needed.

Refrigerate the salad several hours before serving.

A hundred things I like, Many posted here.

Maybe this one

She doesn't cook much anymore and she was always the chief cook with us performing KP duty. Now, we cook and she wanders in and out of the kitchen smiling after she verifies we are doing it the right way.

I have altered almost none of her recipes. As far as I am concerned they are perfect.

she makes a beef stroganoff without the sour cream that is fricking out of this world

her enchiladas are the fricking bomb too.

always goes hard in the paint at the holidays.
