Looking for casserole ideas using fall vegetables, feta , and olives

Wife(no pics) wants to make some type of casserole using egg plant, squash, zuchinni , etc. I am really craving something with lots of feta and olives. Any ideas??

Thanks Rohan. We have actually talked about making a moussaka for the past couple of weeks. Not really what I was thinking for tonight though.

I just don't know how feta and olives fit into a casserole. Maybe try making an orzo pasta salad and have your main course be an eggplant / vegetables stir fry or something.
Could also do a puttanesca.

What about a frittata or quiche? You can saute those fall veg until slightly tender in EVOO, then mix w/some beaten eggs & cream. Pour into a pie crust (for quiche), then sprinkle on some feta & olives. Bake until puffed & set.
Or, make a sort-of tagine out of the veg: dry toast a little cumin, add some red pepper flakes, saute your veg until tender, then add half a big can of pureed tomatoes (or some chopped fresh tomatoes), chopped olives, and some za'ater (or just thyme & oregano). Simmer until slightly thickened, add feta chunks, and serve over steamed couscous.
Or, buy some pita rounds. Slice veg as thinly as possible, layer atop pita, add olives & feta, drizzle w/olive oil, & broil until veg soften & blacken a bit. Kind of a faux pizza thing.
Or make a vegetable pilaf....cook the veg a bit in olive oil & plenty of garlic, add rice & stir until it turns translucent. Add some pine nuts, oregano, olives, a little chopped tomato, and water/stock appropriate for the rice volume. Cook until rice is done, fluff, sprinkle feta over each serving.
Or roast the veg in the oven w/EVOO & garlic until tender, then layer on good bread w/olives & feta for roasted veg sandwiches.
