Smoked turkey wings and/or necks are widely available. Look at your local Winn Dixie or Rouse's, usually in the meat cases down near the end, over by the smoked & pickled pork products.

I'd wrap my necks in cheese cloth. I love turkey necks in a gumbo but I hate dealing with the tiny bones when they fall apart. Rouses sometimes carries smoked wings and legs. You might be better getting those.

Also look for those big arse smoked turkey legs. Be sure to buy an extra so you can gnaw on it while cooking your gumbo.
