How do you baws cook catfish when not frying it?

I finally have a freezer full, and I fry about once a week but I'd like some good methods yall use for a little variety. I figured it was more appropriate over here than with those pansies on the food board.

Great minds think alike!

I've baked it before with some type of seasoning. Turns out pretty good. A filet doesn't take too long, and I can usually fit about 3-4 in a small pyrex dish, lined with foil. Brush a little olive oil on the outside and it will crisp up a little. I've used everything from lemon pepper, to old bay, to just salt and pepper, depending on if I'm making any sauce to go with it.

Also frying some nuggets up is a good change. The kids will eat those more quickly than they will just a fried filet.

Baked, broiled, blackened, grilled. I've never had catfish prepared in a manner that I didn't like

Olive oil, garlic, thyme, rosemary, splash of lemon, dash of sugar, salt and pepper...all combined in a bowl. Pour onto of fish, bake.

Works with Redfish and speckled trout as well

Often a stew of some sort, which you can apply any number of Cajun names to.

Lately I go tomato-based. Onion, celery, pepper, okra, chopped tomatoes, tomato sauce, cut catfish, maybe a little broth. Seasoned how you like it.

Over rice.

This is where nearly all of my bellies end up, too.

This works well. Be careful with the herbs,especially if dried.Can overpower the fish. Throw in some capers for something different.

If not fried I take steaks with bone in and cook a courtbillon on the open fire with a quatre pot. Other than that, no use for catfish
