How do you like to prepare your deer meat?

And what do you like to make? sausage, gumbo? I have never gone hunting before.

I grind everything but the straps and sweat meat. I got tired of pretending I liked the rest. It's pretty terrible IMHO.

Agreed...there are alot better tasting animals compared to White tail .

I enjoy the backstrap / tenderloins and I like to make cutlets out of the hams and the rest i turn into jerky and or tamales

Cut my backstrap into 3-4 inch steaks and grilled them to rare/medium rare, or fry it like chicken fried steak.

Roasts stewed long enough are every bit a tender as a chuck roast and I actually prefer a deer roast to a beef roast.

Sausage green onion fresh link and regular smoked from Bergeron's and I'll make some breakfast sausage using vine's seasoning

Why the hate on fried backstrap. That is some fine eating paired with some red beans and rice. Pass it through a cutlet machine then batter and fry mmm mmm

You can make a pretty good stew out of cubed deer meat, but otherwise, yeah.

Fry the backstrap, but it in a biscuit with some egg and jelly and that will be one of the best meals you have ever eaten.

Backstrap: remove anything that isn't red. Either cut into 1/4 slices and deep fry or cut into 3-4 inch steaks and grill rare with generous amounts of salty seasoning.

The rest: grind for tacos or spaghetti or sausage

It's good fried, but once I saw the light and started searing it on a skillet/grill and eating it med-rare (or rare) I will only fry it upon special request from the wife or children. On all other occasions the girls know daddy is going to cook this giant chunk of deer meat and eat it all himself with blood running down his chin.

Grind most of it to make chili, cabbage rolls, and hot tamales. Make jerky out of the rest. You can't taste the difference in all of these recipes with using deer meat compared to beef.

I did have some summer sausage that was great, but I'm sure it's pretty expensive to make.
