Have you done this? what were the pros and cons? This can be very lucrative if you're good friends with bartender and no cameras are around. Then again, it also can be kind of a waste of time and boring because no else is around to talk to.

This is a really strange thing to think about.

Why do cameras not being around have to be a part of the question? I'm pretty sure you nailed the pros and cons in your original post FYI

The bartender must really be hooking him up if someone going back and watching old footage is a part of the equation

If I can find a bar that's just me, the bartender and a jukebox, I'll never ever leave.

I do this a lot on Sunday mornings. I don't have a problem with it. I could talk to a wall.

I have done it before when I knew the bartender. I just wanted to see my buddy. Went and chilled and actually enjoyed it. After that experience I would certainly consider doing it even without knowing the bartender. It was happy hour time and I met some very interesting people.

My Dad and I used to go to this place in Nashville when we'd go up there for Titans games. We'd get there around 10:30 in the morning and stay until around 2:00. The kitchen didn't open until 11:00 but you could get your first drink and put in an order for an appetizer and they'd bring it out shortly after 11:00. Several times it would be just us and the bartender until around 11:45 when the weekday lunch crowd started coming in. We'd been there several times and it was always the same bartender. About the 3rd time we were there he'd offer us a taste of some of the higher end bourbons before we'd order another round, and most of the time we'd get that. Then he'd give us a couple of freebies if we were just getting Makers Mark. That is about the only "free" drink I've ever had from a bartender. So, yeah, if you want to go sit in a place with a lonely bartender and conversate with him just to score a free well drink after you've been there a while, knock yourself out.

I've done it when travelling for work. Usually the hotel bar. Sometimes other people were there, other times it was just the bartender. I'd rather sit at the bar, have a bourbon, and watch a football game with the bartender, than sit in my bed alone watching the game.

I bounce around the US, and have been to bars plenty of times alone. Just buy some shots for a group and they're typically more than happy to hang with you.
