Cauliflower Rice?

Anyone here ever use cauliflower as a substitute for rice? I just discovered this. I made some and had "rice" and gravy and it was actually pretty good. It doesn't fill you up as much but it's a good sub, flavor-wise. It looks more like couscous than rice and can sometimes smell like farts...



All you do is cut off the cauliflower stalk and put pieces of cauliflower in a food processor. Pulse until it gets to the consistency that you want, then microwave (don't add water) in a covered container for 6-7 minutes.

I've heard about it but have never tried. I do plan on trying it though. Looks like a good consistency

You can also saute' it in a little oil for a few minutes. I think it fills you up just fine with something a lot healthier than rice.

My old lady made fried rice with this when she was on a gluten free kick. It was damn good.

we make cauliflower dough for pizzas and cauliflower mashed potatoes and they are damn good

this sounds good too

I have made it a few times. Heat up some oil with some red peppers and throw the cauliflower rice and cook on the stove instead of in the microwave.

I saw some blogger touting jambalaya made with cauliflower rice. I don't think that would be very good.

I was actually thinking about trying to do jambalaya. Not sure how it would turn out. The thing is, cauliflower is a hell of a lot more expensive than rice.

I've had it as a sub for mashed potatoes and it's pretty good.
