Gumbo w/ okra recipe - who has a good one?

Yeah, I know some people hate it, but I'm personally a fan AND I happen to have a bag full of fresh okra that I need to get rid of. How do I go about incorporating this?

Slice or mince and stir into the roux and trinity at the sauté stage.

Word. Didn't know if anything else needed to be adjusted roux wise since okra helps to thicken as well.

No. Just build with stock to the consistency you like.

Cook it down in a sauce pan first so it doesnt make your gumbo slimy.

i highly recommend smothering your okra with onions before hand. will help with texture big time. i may smother my okra anywheres from 2-4 hours.

This is what I do.....

Actually I cook all my okra in a croackpot with onion, water, vinegard and cooking oil. I freeze it in ziploc bags and add it to my gumbo as needed.

Strongly considering trying that crock pot method. It doesn't stay how much water:okra do you use?

I add cut, frozen okra with the Trinity. It never turns out slimy and it pulls the temp down a little on that nuclear hot roux.

For a full crock pot of cut okra I put 1 onion, 1/4 cup of cooking oil, 1/4 cup of white vinegar and about 1/2 cup of water.

It takes about 5-7 hours and you do have to stir it about every hour or so. I normally cut everything's up and put it in the crock pot and start on it early the next AM.

This one has okra

Shrimp and Chicken Gumbo

You can leave out the shrimp and add sausage if you like.

Uses fried chicken (with roux made in the oil used to fry the chicken for those who have questioned that method

This is exactly how I do it, except on stove top. Okra, onions, small amount of oil and vinegar, adding small amounts of water as needed. Portion into ziolocs, freeze, and you've got smothered okra ready to go.

Im from Houma too...... I cook it on the stove, in the oven, but mostly in the crockpot. Ove done it once in the microwave and it came out okay as well.
