RESULTS on p3: Going for the Reverse Sear tonight

Got two nice Ribeyes about inch and a half thick. What temperature and time am I looking at to produce that perfect medium rare?

Will post pics as the evening progresses

The minus 10 minutes till I throw these babies on...Some sea salt ... A smudge of garlic salt because I like that. A smattering of Adams rub.

I would probably put them on at 250-275 until they get to about 115 degrees internal temp. You have a thermometer?

I tried it two weeks ago and severely fricked it up. It was well done.

How would you guys do it in a convection oven? (Time/temp?)

This is my problem. I don't have one. I'm also not going to get one.

So I will experiment a bit until I get it right.

never done the reverse sear, but the caveman style is excellent.

Yes I have a thermometer but it's the kind you stick in the middle of the meat. Not sure how accurate. Also do you need to remove the meat to test the temp?
