There has to be something you can eat other than grilled chicken and veggies...

Chop some zucchini up into noodle like slivers. Sautée or steam them until they are cooked. Pour pasta sauce and Italian sausage over it. Low carb spaghetti.

It's gluten free, as well.

Shrimp salad. I'm lazy and get the frozen boiled shrimp. Lettuce and make cocktail sauce with sugar free ketchup and horseradish

Taco salad. Salsa and non fat yogurt as dressing

Kabobs. Whatever meat with onions, mushrooms and bell pepper

Hamburger soup with hamburger meat, beef stock, crushed tomatoes and, depending on your idea of low carb, green beans, peas, corn. Skip the potatoes and carrots

Chili

Pork chops, steak, bbq chicken with sugar free bbq sauce

You can pinterest all kinds of low carb recipes. Imitation rice, pasta, pizza dough can be made with cauliflower and squash

Walden farms makes some great carb free dressings, dips and sauces

They make this chocolate peanut butter that you can dip apples in that's delicious. You can find it in the diabetic section
