Dirty rice-need help

I want to make some dirty rice today.

I need help with the chicken livers part.

The recipes all say that the chicken livers need to be finely chopped or pureed.

Then when it comes to the cooking, it doesn't provide me enough info. Just says, cook the pork and livers.

Anyone give me any help with a bit more how to?

My guess would be to sauté and build the dish from that. Might help to post the recipe.

The relevant parts:

"4 ounces ground pork
1/2 cup chicken livers (about 4 ounces), pureed

Heat the oil in a large skillet over high heat. When the oil is hot, add the pork and chicken livers and cook, stirring, until browned."

That's all it says about the chicken liver part.

Yup, just cook it all together. Make sure you let it sick to the pan and get it good and brown.

You using Donald Link's recipe?

Puree them, then throw them in the pan with the pork.

His is a pretty solid dirty rice recipe.

Most people use ground beef these days but to me dirty rice is only made with chicken livers.

I haven't seen chicken livers in the supermarket for a long time. Anybody recommend a place to buy them in Baton Rouge?

They're probably going to be frozen most places. Wal-mart sometimes has unthawed ones.
