I think my oldest beer is a 2009 Avery Hog Heaven Barleywine...it's probably disgusting now
I have 2011 - 2013 Pumpkinator. I want to a do 5 year vertical.
I have a 2013 Parish GR.
...and a few others that I cannot remember at the moment. All sours though.

I like to peruse the Cellaring/Aging board on Beer Advocate and you do come across a lot of people warning of building up too much and stuff ends up going past its prime.
I can see it happening. In my closet or fridge, it seems like I always have at least 5 or 10 bottles waiting to be shared with others. So, I never even think about grabbing something from the cellar when headed to a tasting.

Most of mine is in storage right now unfortunately. I need to transport it all back home soon, so we can start breaking them out at tastings.
Probably something like 6-7 cases worth of beer.

I have a couple cases of bombers and about a case of smaller bottles cellaring, but I have no idea why at this point. I keep saying I'm saving them for a special occasion or some such, but never seem to break them out. I plan to start drinking it down soon.

Do any of y'all have actual cellars in your homes?
Or is this a store the beer in a box next to your pairs of shoes in the closet type of thing?

my "cellar" is just my designated beer cabinet

I have a wine fridge, but I only keep corked beer bottles in there.
Mostly it's...

I use a dorm fridge with a temperature controller, as well as a 16 bottle wine cooler.
I have a lot of stuff in my closet, but none of that I plan on aging long-term, just haven't got to it yet. I don't consider any of this stuff "cellared."

(1) An old fridge in the garage set to higher than normal temps
(2) A drawer at work in case someone ever wants this bottle of Westy................

I don't have a whole lot. Some Grand Reserves 12 and 13, some Bruery Bois, GI sisters, a couple Fantomes, random assortment of homebrews, and random barleywines. Recent additions are a few SP Barley Legals.
Nailed it for my cellar.

I keep a dorm fridge for some of my "higher end" brews that I want temp controlled and then a couple boxes in a closet for everything else. Honestly I don't take it very seriously but I do have a couple beers that are going on a few years now, for whatever reason I have like 3-4 years of Narwhal, Founders Breakfast, Black Butte and the Firestone Anniversary beers.

I have 3 2013 BCBW, 5 2012 Expedition Stouts, and a 2013 Founders Imperial Stout.
Probably will drink the Founders this fall with a year of age on it. I'm thinking I'm gonna ride out the others for awhile, but I may crack an Expedition Stout soon to see how it's holding up.
Eta: I also have a 2013 GI Juliet that I'm saving for an undetermined time. I'll probably keep it for a vertical.

You mean some people actually hold on to beer and don't drink them within the first week of getting them?
Yes. Sometimes they sit on them for months, even. Sort of like what you do with IPAs.

When I build/buy a house in the future, I'm going to make sure and have a beer/wine cellar.

I was keeping track at one time. But now I have no idea what I have. It's some decent ones.
I have a dorm fridge with a thermostat on it set to 55.
I also have boxes of stuff set away. I really need to go through all of it soon.
