I had never cellared and my "collection" is just beginning so it's not impressive.

Right now I have 2 2013 BCBS's and a 2014 DFH 120 min. I also have a Blackstone Black Belle Stout I'm contemplating whether to cellar or drink now

Someone impress me

Is cellaring beer an actual real thing?

Yes, usually stouts and high gravs

my BCBS's are 15% ABV, 120 min is usually 18-21% depending on the batch

I don't really age beers but there are some folks from the FBD krewe who have some really solid cellars. I think the only things I have are a Parish Grand Reserve '13 and a St Arnold Pumpkinator from last year. Beers don't last long in my house.

13 Grand Reserve and a 2012 and 2013 Pumpkinator that will be consumed once I get a 2014.

I don't really cellar much, obviously. A guy that I respect a lot made an argument about cellaring and how it affects beer and I've more or less adopted it. If I land some Cantillon or something, I'll age that for about 3 years, however. It's all personal preference.

Two 13 Grand Reserve for me. One will be opened this week at FF draft party and the other at Christmas when I buy 4 more for next year.

There's no way beer would last long enough in my house to have a need to "cellar" it.

I have a fair amount of lambics (Cantillon, 3F, and Tilquin) cellared, some of which I'd like to hit 10 years or more on. Been thinking about digging a hole on family property and burying some.

Also have a good bit of stouts, barleywines, old ales, etc in the cellar. Most will be consumed within five years most likely.

The oldest beer I have right now is an 09' DFH World Wide Stout, but I want to drink that in the near future with another FBDer who has this years to compare.

Case of half 2012, half 2013 Pumpkinators, plus a few remaining '13 (?) Crown Valley pumpkins that I got fussed at @ Cuban for buying so many of (sheesh). Hey, I just like pumpkin beer.

FYI, 4 years on these is worth the wait.

Yeah I really want to wait...I started with 2 four packs and decided I would drink one four pack around the time I got it (plus the Iron Bowl was like the next day) and cellar the other

Out of my "cellaring" four pack, I ended up having one after finals and one around christmas

luckily I've been able to pace myself enough now and put them somewhere really hard to get to to discourage my drunk arse when I run out of beer and need one

Hardest part of cellaring! Especially with a 4 pack.

You mean some people actually hold on to beer and don't drink them within the first week of getting them?
