Crawfish Etouffee--use the fat?

I'm making this dish for the first time and I normally wash the fat off of store bought (LOUISIANA) crawfish when cooking other dishes.

Should I wash the crawfish when making etouffee or leave the fat on?

some here are gonna tell you to never wash the fat...I disagree...

in my opinion, fat that has been frozen gets really funky smelling and I always wash it off...

if you have fresh tails and fat, I would not wash...

I agree if it has been frozen it takes on a more fishy taste in my opinion. Not frozen I use the fat

I think it depends on how long its been frozen.
The fat will go bad before the crawfish I have been told.

As much as I am of crawfish fat the little bit in the package of tails wont matter much IMO.

I even tested it one time left it in the freezer for only 2 months in vacuum sealed bags and still the same result. I think once its frozen the fishy taste comes

I agree with everything in your post. I nearly always use the fat, but I've only had a problem one time with a fishy taste and I caught it before I used them. I tossed the whole bag and pulled out a newer one. There's definitely not much fat in those bags.

I washed them.....the smell was VERY fishy.

I also noticed that I fell for the old trick of putting a picture of the state of La. on the packaging and calling it BOUDREAUX'S crawfish while having the tiny print at the bottom indicate that Good ole Boudreaux is just a distributor for a product of CHINA!!!

If u want it to taste fishy, don't wash. I've done both. Once u have a really fishy batch you will wash everytime

I purchased 3 of the Boudreaux/China products and 1 of certified La. crawfish.

I will agree that the smell of the La. crawfish was MUCH milder..... I went ahead and dumped them in without washing that one bag.

I only make this dish with left over crawfish I boil and there still fishy after frozen with the fat. It taste alright but has more of a fishy taste.
