Just got some fresh Tuna, any cooking suggestions?

Search the site and there are plenty of threads, but I always got black iron skillet as hot as possible, dash of safflower oil, 20-30 seconds per side.

This. You can marinade in a soy, ginger, oj mix if you like.

Never marinate YFT steaks IMO



Get pan hot hot hot
Coat room temp steaks in Olive Oil
Salt and cracked black pepper
sear on each side for 20-30 seconds
pull it off


You can put soy sauce or whatever you want on it afterwards

Olive oil and sea salt, cooked on a grill grate placed directly on a full, hot chimney starter of lump charcoal. Great sear on the surface really fast while still mostly rare throughout.

Don't cover the flavor of fresh tuna.

Smear both sides with wasabi, put a light dust of flour on top, sear on each side for about 30 seconds in a white hot black iron skillet.
