To add to the new direction of this thread, I think we all can agree the Maverick ET-732 meat thermometer is probably the best bang for your buck:

Victorinox Knives with the polypropylene handles truly are an awesome value. I have the boning knife from them currently and will be adding more obviously now. If you want a few starter knifes that are a great value, I would start there.

The fibrox knifes from Victorinox are a great value as well. As with many things kitchen, one should purchase items in a piece-meal fashion to get only items that you need rather than buying a set that includes items you'll never use.

I've been using an OXO knife block set someone gave me like 5 years ago. They've served me well but I'm ready to step up to a higher quality and definitely go piece by piece.

Yeah OXO is good value as well, but a few steps below Victorinox.

What are you looking to upgrade to? Are you starting with a Chef's knife?

I have a really nice Henckels 8" chefs knife that I really like but I'm not sure about it's ability to hold an edge.

Caplewood is a pretentious frick, but he knows his knives. I hope he adds his input in here.

8 or 10 inch chef's knife, 4 inch paring knife, and a 5 inch suntoku cover 90% of what I do. I'm not sure how high I'm trying to go. I may ask for some Shuns for my birthday. If I pay for them it will be a few notches lower Wanna start with the chef and suntoku first.

I got a sous vide machine from there. Only used it once so far. Wouldn't call it a great investment.

After I reverse seared a steak yesterday, I think I'm sold on the sous vide, but I truly don't know how much I'd use it.

Which one did you buy?

How much for that paring knife? It's $5.00 at Ducotes.

I have about three or four small thermometers and that's all I use. I've had every kind you can think of and the pen pocket ones are the cheapest and the best.

I do use a scale somewhat often.

I didn't bite on the sous vide machine Powerman. Just knew it would be one more thing to go in my attic next to the hundred other kitchen gadgets I've bought over the years. I've become a minimalist. Couple good knives, couple good cutting boards, wooden spoons, fish spatula and good pots, pans and skillets. That's about all you need.

If you want to treat yourself to something really good and special buy a Boos Block. I've bought three for different areas and they are the best cutting boards I've ever had. They require maintenance rubbing bees wax into them but they are worth it. I have the dark walnut which I really like.

The knife is $7.80 from Amazon with free shipping, it's the fibrox version and is a good VALUE not the best quality available but for value/cost it really can't be beaten IMO.

I think we have four of them and use them every day. They stay sharp and cut/peel nicely.

Think wife purchased them in LA at outlet mall.

Chef's knife is a must have, 8 or 10 inch likely.

I'd suggest going to a Williams-Sonoma or Sur la Table type place and seeing which style fits your hand better, some people prefer German, others Japanese. It's not something I'd buy online without holding it first.

I'd look at Shun, Wusthof, Global and Henckels. I personally love my Shun but everyone is different.
