I'm Making Pepper Sauce

I wanted to do hot sauce, but the farmers market had sweet peppers.

So any first hand tips from yall?

you can still do it the same way. put peppers and seasoning in jar or bottle, heat up vinegar to just before boiling and busting glass, fill her up and seal.

he's referring to chow chow being a semi sweet relish with chunks, etc, to spoon over peas and stuff.
I'm assuming when u say pepper sauce, you mean vinegar based? I add salt, white pepper, cayenne and garlic,, or, just pour some Tonys, or slap yer momma.

In mine, I add some garlic cloves, shallots, a little brown sugar, and some whole allspice.

Hmm I would wait until you have hot peppers to do a hot sauce. I pick mine and will play around with mixtures of different peppers and vinegar in the food processor. Food processor really breaks it down to a usable liquid.

I grew a bunch of Tabasco peppers and just have them sitting in bottles of white vinegar in the fridge. Vinegar is pretty hot and can be used whenever you need vinegar and want some heat. I also use the liquid in brines.

That hot vinegar can then be added to the next batch of hot sauce with new peppers in the food processor.

Well that is what my intention was, but our plant is not producing enough peppers yet. And I am impatient.

I like the vinegar idea. I will start doing that with the lone peppers that do produce.

I'll be back in town on the 20th. My mom has been tending to my pepper plants while I'm gone though. Hopefully my mom has a green thumb because the plants were looking great before I left(have around 7 I think). If they're looking good and producing, come over and grab some to make some sauce.

I make a bunch every year. It's really easy. Pretty much do the same thing ole geauxt does. I like to add some garlic to mine. Not sure how much flavor you're going to get out of the sweet peppers, but what the hell try it out. I would recommend letting your bottles sit at least a month before cracking em open.

I grew some tabsco plants as well, but im letting the peppers dry out first, im not really sure why. Figured i'd make a hot sauce out of them eventually. Does anybody make any hot sauces using fermentation?
