Does anyone have a vegetarian night weekly? Suggestion for kids.

I'm thinking about having a meat free supper once a week to get my kids to be more adventurous. Any ideas?

I'll start with some pastas, spinach, mushroom, and olive meals. These are all things they like.

Spinach stuffed manicotti.
Mushroom ravioli.
Margherita pizza.

I'm afraid they would balk at salads.

Roasted veggies are good as sides (cauliflower, okra, string beans, broccoli, Brussels sprouts).

A good baked potato is always good. My kids love casserole veggies like squash, sweet potato, or green bean.



ETA: Fried rice or veggie stir fry is also a favorite.

Pizza is always good.

One of my favorites is quinoa chilli w/ avocado and cheese

If you can learn how to cook using seitan, there are endless recipes you can make. Last week I had seitan Thai chili wings with siracha ranch

A frittata can use a variety of vegetables. I've only made one once. It was so pretty!

I second roasted veggies, but you can incorporate those as sides to regular meals instead of trying to make them try things without being served with other foods they already like. Roasted veggies taste so much different from steamed or sauteed with the caramelization. Soups made from those are so good. Make a soup and have a grilled cheese sandwich with the soup, for example so they're starting off with just a cup of soup and something they like. They can dip!

Also, you can do a lot with roasted tomatoes from soups, to pasta sauce to pizza sauce for cheese pizzas. I've posted a great roasted tomato soup here and I used that as a basis for just roasting a bunch of homegrown tomatoes I needed to use. Then, I froze those in vac sealed packets for various uses. Delicious stuff. Such a deep deep flavor.

Omelets could be fun. Let them pick their ingredients to go in them...customize for omelet night.

Quesadillas with cheese and grilled veggies is another idea. Same with Tacos. Make them with grilled fruits. You could start those out with fish and add grilled fruits and go from there if you want veg only tacos.

You could try kale chips.

Grilled portobellos alone or as a sandwich/burger. Not my thing, but a lot of folks like them.

I love falafel, hummus, baba ganoush...you could have a Mediterranean food night. Pick up what you don't want to make at home.

I don't think you have to start with vegetarian night to get your kids to be more adventurous and eat more vegetables. You can simply starting adding those vegetables to meals and progress from there.

Falafel balls.....they are fried so kids will love them. I love them and usually make a pita wrap with them adding baba ghanoush (or hummus) tatziki, lettuce, tomato, pickles and whatever hot sauce you like.

This is the falafel mix I use. Just add water, form balls or patties and fry (or bake).

Bean and cheese & onion quesadillas

Bell peppers w/ beans, spanish rice, cheese, & onion

No lie, the Morningstar chicken nuggets w/ some sides for a quickie meal

Eggplant parmesan

Yea. You don't get the good crunch like when frying them. But they are decent baked. And when you mix them in a pita wrap, they are good.

I could just make (meatless) chocolate cake for supper. My kids would love me.
