What are your favorite burger toppings?

I am going to sauté onions and mushrooms together.

Also going to do a roasted garlic mayo/aioli.

Whatcha got?

Had a peanut butter, grape jelly, and bacon burger at a dive bar in Tallahassee once.

It was glorious

all good ideas.

How about a jalapeno relish? How would I do that? dice the jalapeno and sauté with some salt and pepper and maybe a little honey?

Put some eggs, breadcrumbs, worcestershire, and knead it like you're activating gluten. Or just sear it Gaston style.

ETA: I love blue cheese or swiss on burgers.

Grill some poblano peppers until they are well charred. Open them up, take out the seeds, peel off the skin. Thank me later.

Foie gras, arugula and garlic aioli

Or how about topping the burger with gulf fish.
