How to use Green Onion?

I have a bunch of leftover green onion. I've seen recipes for fried green onions or side dishes with sautéed green onion.
Anyone have any recipes or other ideas?

Chop fine a half dozen of the white bottoms. Sauté' them in a little oil or butter till almost brown. Add to a pint of sour cream, 1/2 cup mayo, a minced clove of garlic, and the finely chopped onion tops. Mix, then return most to the sour cream container. Put that in the fridge. Eat the rest.
