Okay guys, since the elusive almaco jack is so high on everyone's list, I've come asking how I should cook it. I've got a few fillets frozen in a vacuum bag. Lately I've been baking my fish topped with breadcrumbs/butter/garlic mixture, but i don't want to use an inferior recipe for my one shot at an almaco.

Step 1: Don't freeze it...

I love the stuff, awesome on chicken breasts and pork chops, but I never try to push people towards using this or that seasoning, its all a matter of taste

don't dry it out and it's gonna be good
