What would be a fair price for economy non-refundable? I've been looking and the prices seem kind of high.

International airfare is cheapest on average 151 days before the flight. That would mean you should book your March 1st 2015 flight on Oct 1st.

Since I've been looking at MSY to Barcelona and Paris to MSY for June, I can tell you they average $1700 each way for economy.

somewhere in the neighborhood of $700-1000 is what I'd consider normal. You probably won't do much better than $900 though.

Saturday & Sunday flights are generally the most expensive for international flights. Any chance you can fly Tuesday - Thursday?

London is sometimes a good bit cheaper to fly into than Paris.
If you're willing to spend an extra day or two, Paris is only a 2 hour train ride from London. And London is a cool city to visit too.

That may sometimes be true, but it certainly isn't due to the taxes in the airfare. Taxes leaving the UK are almost $200 a person. I usually find London airfares higher due to this.
I've been looking at similar trips in that kind of time frame and found Brussels to be a cheaper gateway to Paris. Cheap enough to afford the extra train ride to Brussels to avoid the UK departure tax. (While being hundreds less than Paris too.)

I'm trying to time it so I can get the lowest fare I can but also sign up for a tour group before it sells out.
