Elk steak suggestions

It's about 1 1/2 thick sirloin. What to do?

I've always treated them like very lean beef. Sear or grill to mid-rare or so. Overcooking can leave them quite tough.

I will sometimes cut them into cubes and make a beef tip like meal using a gravy composed of black pepper and fresh portabella mushrooms. Serve up with garlic mashed potatoes FTW!

I've done a hatch chile stew with my elk meat. Keeps it moist and tender as the elk is very lean.
