In Florence: Trattoria Acquacotta and Trattoria Gargani. Gargani has a killer atmosphere; mostly locals and when we were there the owner knew everyone who walked through the door. Skip the Fiorentina if you go...they don't give you the filet side and it's pricey. Everything else was great.
The atmosphere at Acquacotta is quiet and very homey...feels like you're eating in the owner's home. The food is incredible...the lamb and the rabbit stuffed meatball were amazing.
Both of these restaurants were recommended to us by our driver who is lives in Florence. Can't miss places IMO.
For Venice, we didn't eat anywhere really memorable. Just walked around and looked for tripadvisor stickers and for people not to beg us to eat there lol...everything was very good, just not mind blowing.

You're gonna love Florence. Greatest city in the world IMO. Well, after Beaumont.

Florence: Buca Mario, La Sostanza for bistecca Fiorentina, Cantinetta Antinori for good food and a lot of good wine, dei Frescobaldi for the same.

There is a sandwich shop in an alley near the Uffizi that was absolutely killer and cheap. Perfect for a quick lunch. I forget the exact name, but I'm pretty sure it was in the top 5 on tripadvisor.
