What to cook on a Sunday evening with 1 lb crawfish tails?

Thawed them to make crawfish and snow crab cakes. Had enough crabs for tonight and I didn't need the crawfish. Give me some ideas with the tails.

I'm a huge fan of crawfish omlettes, but maybe for dinner a frittata or quiche would be nice. Salad on the side and some French bread.
Edit. Cajunate posted a recipe lately that was made with smoked sausage and crawfish in a tomato gravy I think. Search for that, it looked really good.

-Crawfish and andouille/tasso in a cream sauce over linguine.
-Crawfish omelets
-Etouffee
-Fried
-Crawfish and corn bisque
-After the boil soup

pic below is from my prior food challenge entry , improvised as follows:

either cook down fresh spinach leaves or buy canned and drain water

add crawfish tails, feta cheese, Parm, shredded mozzarella, season and mix together

spoon onto fillo dough and roll into triangles, bake and done
