anyone ever use cannellini beans for cajun style white beans?

i normally use navy or great northerns, but i got a big bag in my Besh Box earlier this year. I'd like to use them, but not if its going to significantly change the dish (creamy white beans to be served with fried fish).

They are a white bean. They are a bit larger than great Northerns and about twice the size of navy. Use them the same. They are really good beans.

I add to my white beans a rosemary sprig wrapped in cheesecloth so it doesn't come apart in the beans. Gives a great flavor. I also on occasion put just a small pinch of cinammon in them towards the end for another dimension.

And man they go great with fried fish.
