New Ways to Spice up boring dishes?

Such as chicken
Hamburgers
Tacos
Spaghetti

What are some dishes many consider "boring" that you spice up and how?

Cook boneless skinless thighs in all chicken recipes, eat hamburgers rare, make real Mexican tacos with onions and cilantro, and use jimmy dean sage sausage instead of ground meat in your spaghetti sauce.

Find a spaghetti sauce recipe with crushed tomatoes/Chianti/molasses. It will change your life.

If you think tacos are boring you're doing it wrong.

Cook your burgers in a cast iron instead of on the grill

You might already do that though

chicken - chicken is chicken, if you want to get fancy, you can brine it or do confit chicken

hamburgers - just play around with condiments and sauces, make a homemade aioli or brioche buns

tacos - too many things you can do with tacos for them to be boring

spaghetti - add zucchini to your sauce, make homemade noodles

Hey duck

My dad makes these meatballs with smushed up French bread in the middle. It's the best bite ever :-)

Burgers. Hmm. Have you tried turkey burgers? With big chunks of trinity and taco seasoning and salsa mixed in?

Chicken. Peanut satay on the grill is my favorite chicken recipe. Or try making Chinese!

How ab chicken spaghetti? Mushrooms and boiled chicken. Save the juice to mix in the sauce.

Tacos? I got nothing.

Buy whole chickens. They're cheap. Stuff them and braise them.

Hamburgers

I like plain hamburgers, so I can't help you. Maybe grind your own meat?

Tacos

Try different meats. Throw a butt in a crockpot with some mexican spices.

Spaghetti

Cook noodles in chicken stock and add chopped anchovies to your sauce.

Chicken is boring, no question, but it can handle all manner of different spices and cooking methods. How are you cooking it?

I don't vary much on burgers. Salt and pepper is about all I use whether I grill or cook them in a cast iron skillet. Last time I made burgers, I sauteed some shallots and jalapenos and mixed them in the meat by "cutting" it in with a fork so I didn't have handle the meat too much. Added a bit of flavor I enjoyed.

What kind of tacos are you making? Chicken, fish, ground meat, pork, other beef cuts?

There are several recipes for red gravy/meat sauce in the recipe thread and book. Browning your tomato paste adds some depth of flavor. Using wine adds flavor. Browning and then simmering pork bones like necks and ribs add flavor. Using oregano, basil, thyme...depending on the flavor you're looking for will add another layer. Simmering parmesan rinds in the sauce is another option.

I would suggest braising some pork for your next pasta dish. 1000's of recipes on the web will show you how to pull it off.

If your intent on sticking with your tomato sauce.

These 2 are good, I also will use anchovy paste for additional flavor.

I keep forgetting to do this when I make chili, but apparently this really sets off some good flavors.

Dice some chicken and use blackening seasoning in a hot skillet. I've been on a blackening kick lately. Never boring.
