Boiled Crawfish - Vietnamese Style
Posted by SUB on 7/16/14 at 10:01 am00
Has anyone ever had this? I have a Vietnamese friend who's filled me in on the traditional Vietnamese way of boiling / seasoning crawfish. Basically, you cook your crawfish with a little bit of crab boil and toss it in a garlic butter sauce (with other spices).
Honestly, it seems pretty stupid to pour sauce all over the hard shells of crawfish and expect it to impact the flavor of the meat. It would make more sense to just use the sauce as a dip rather than wasting it all on the outside of the shells.
Here's a video that sort of shows how it is done.

You mean the way all those Baton Rouge people boil crawfish?

Not really. This isn't the ice chest method. Dry seasoning is not sprinkled and no steaming either.

Who do you hang with in BR that boils like this? In 10 years of living there I never saw anything other than a regular ol' boil. Nothing on top.

Also called Shabang sauce. It's quite popular outside of Louisiana. People go crazy and pay outrageous prices $6.99 and up for crawfish during season. The Boiling Crab is a restaurant that has capitalized on this niche market.
They had a place in Houston called Shuck Daddy's that did pretty much the same thing. When you would order crawfish they would ask what flavor you wanted. Then they would throw the boiled crawfish is a bag, add the flavor seasoning, and shake. Kind of like what chicken wing places do but with crawfish. Went once when they first opened and never returned. They closed up shortly after.

That NY Times article says
Someone from SW La tell me if that is right. I've never heard anyone up here refer to a boiling point.
